Saijo persimmons are my favorites of the 12 persimmon varieties we grow. In Japanese, I am told "saijo" means the very best one, and that is no lie. They are an astringent variety, like Hachiya. They must be ripened to the consistency of pudding before eating.
Are they as pretty as Hachiya? No, they tend to get black sun and wind burn markings. Are they as big as Hachiya? Also no! They are about half the size. But the flavor is unbelievably rich and complex compared to other persimmon varieties.
